Synthesis route :

Cinnamyl Acetate is synthesized by an esterification reaction between Cinnamyl Alcohol and acetic acid. This reaction is catalyzed by the presence of a small quantity of a strong acid such as sulphuric acid. In addition, the yield of this reaction can be improved by the use of acetic anhydride or chloroacetic acid, rather than acetic acid.

Synthesis precursor :

Cinnamyl Acetate is not a precursor of the synthesis of another compound of olfactive interest.

Isomerism :

Cinnamyl Acetate has two diastereoisomers, due to the presence of a double bond in its structure. The (E) isomer of Cinnamyl Acetate has an even sweeter smell than the (Z) isomer. Anyway, both have a similar smell, which explains the use of a racemic mixture of the two isomers in perfumery.

Natural availability :

Cinnamyl Acetate can be found in small quantity in some plant extracts such as Ylang-Ylang Extra EO (and other ylang fractions), Laurel EO and Cinnamon Leaf EO, as well as Narcissus Absolute, among others.

Linalool and natural products known to be rich in linalool, such as bois de rose, coriander or ho wood oil, should only be used when the level of peroxides is kept to the lowest practical level. It is recommended to add antioxidants at the time of production of the raw material. The addition of 0.1% BHT or alpha-tocopherol for example has shown great efficiency. The maximum peroxide level for products in use should be 20 millimoles per liter. The (hydro)peroxide content can be determined by using the FMA method.

Oxidation products of Linalool, especially hydroperoxides, have been demonstrated to be potent sensitizers. d-, l- and dl-Linalool and natural products containing substantial amounts of it, should only be used when the level of (hydro)peroxides is kept to the lowest practical level, for instance by adding antioxidants at the time of production. The addition of 0.1% BHT or α-Tocopherol for example has shown great efficiency. Such products should have a peroxide value of less than 20 millimoles per liter, determined according to the IFRA analytical method for the determination of the peroxide value, which can be downloaded from the IFRA website (www.ifrafragrance.org). Natural products known to be rich in Linalool include bois de rose, coriander or ho wood oil.
